You know I’m not big on desserts, and I don’t like custard, so this is my poor man’s trifle. I made it to run down a bag of frozen raspberries, and a bargain Madeira cake did the rest. Who needs to make a trifle when you can knock this up in five minutes?
Ingredients
- 2 handfuls frozen raspberries
- 1 tbsp caster sugar
- Madeira cake cut into rounds to fit your glasses
- generous drizzle elderflower liqueur or limoncello
- 150 ml double cream
- 1 spoonful icing sugar
- few pinches vanilla powder
Instructions
- Warm the raspberries and sugar gently in a saucepan until just defrosted and starting to break down – don't boil them. Set aside to cool.
- Cut rounds of Madeira cake to fit your glasses and press one into the bottom of each.
- Spoon over the raspberries and drizzle with elderflower liqueur.
- Whip the cream with the icing sugar and vanilla powder and spoon a couple of spoonfuls on top.
- Chill until you're ready to eat.
