When you finish a pan sauce with butter, it must be cold, and there’s science behind it. Cold butter melts more slowly, which lets it form a silky emulsion. Warm or melted butter just leaves a horrible greasy layer.
So take the pan off the heat and whisk in chilled butter a little at a time. Silky every time.
