I had lychee juice that needed using up, and this is what happened. India took charge of the shaking. It’s strong, fruity and very lovely.

Ingredients

Serves 2

  • 50ml white rum
  • 50ml dark or spiced rum
  • 25ml triple sec or Cointreau
  • 25ml amaretto
  • 150ml lychee juice
  • 10ml lime juice
  • Plenty of ice
  • Fresh lychees or mint, to garnish (optional)

Method

  1. Fill a cocktail shaker with plenty of ice and add all the ingredients.
  2. Give it a really good, hard shake.
  3. Strain and divide between two glasses. Garnish with fresh lychees or mint if you have them.

Jules’s tip

A spiced rum as your dark rum adds even more flavour.
