Another one made up for my friend Bruce, who challenged me to come up with melon cocktails. It’s nice to have a slightly longer drink for a change.
Ingredients
Serves 1
- 50ml limoncello (I keep mine in the freezer)
- 40ml honeydew melon juice
- 20ml vodka (optional, for more body)
- 15ml lemon juice
- 70ml prosecco
- 30ml soda water
- Plenty of ice
- Melon balls, to garnish (optional)
Method
- Blitz a whole honeydew melon and pass it through a fine sieve – one melon gives about 500ml juice.
- Fill a very cold wine glass with a generous amount of ice.
- Add the limoncello, melon juice, vodka (if using) and lemon juice.
- Top with the prosecco and soda water and stir gently. Garnish with melon balls if you’re feeling fancy.
