A gimlet is gin and lime. Mine is a garden gimlet, made with vodka, mint and lime. The syrup can be made ahead and kept in the fridge.
Ingredients
Serves 1 (the syrup makes extra)
- Lime mint syrup: zest and juice of 2 limes, 80g caster sugar, a small handful of mint leaves
- 50ml good-quality vodka (or gin)
- 25ml lime mint syrup
- 25ml lime juice
- Plenty of ice
- A sprig of mint, to garnish
Method
- For the syrup, heat the lime zest, juice and sugar for a couple of minutes until the sugar has melted.
- Drop in the mint leaves and cook for a couple more minutes, then take off the heat and leave to cool.
- Strain through a tea strainer into a sterilised jar and store in the fridge.
- For the cocktail, shake the vodka, syrup and lime juice hard over plenty of ice.
- Strain into a glass chilled in the freezer and garnish with a little mint.
