I fell for this on holiday at Kamaya, where I could hear the shaker going from my sunbed and knew mine was on its way. I’ve made it exactly the way they showed me, with fresh watermelon and bruised mint. Fair warning: you genuinely can’t taste the vodka, which makes it lethal.

Ingredients

Serves 2

  • 4 small handfuls of fresh watermelon (to give about 200ml juice)
  • A small handful of fresh mint leaves
  • 20ml lime juice
  • 120ml vodka (60ml per person)
  • Ice
  • Watermelon slices, to garnish

Method

  1. Put the watermelon and mint in a jug and bash them with a muddler (or the end of a rolling pin) until you have about 200ml of watermelon and mint juice. Wear a pinny – it splashes.
  2. Fill a cocktail shaker with ice, pour in the watermelon and mint, then add the lime juice and vodka.
  3. Shake well and strain into two glasses.
  4. Garnish with a slice of watermelon on the rim or a couple of little pieces on a cocktail stick.

Jules’s tip

If you’re doing a whole watermelon, muddle the bulk of it, then squeeze the rest with your hands and pass it all through a sieve. Use fresh watermelon rather than shop-bought juice – it really makes the difference.
