Lemon juice turns green beans and peas a dull khaki. So use lemon zest instead: all the flavour, none of the discolouring.
Two bonus tips. Zest on the side of the microplane that collects it, so you can see exactly how much you’ve got. And always buy unwaxed lemons for zesting.
