I want to talk about being creative and using different things to make a meal. On Sunday I confited some duck for something else and made extra, because the children and I love Chinese-style duck pancakes.
I took the legs out of the confit, put them in the oven for 20 minutes, pulled the meat off the bone and sprinkled it with Chinese five spice. Amazing duck for about a quarter of the price you’d pay otherwise.
The other thing I want to say is about sharing meals. There’s nothing worse than leaning across the table or waiting for someone to finish with the hoisin. Be generous with your sharing plates: I put out spring onions, cucumber and hoisin between every two people, with loads of pancakes kept warm.
