I’ve become a little bit obsessed with cottage cheese. It’s high in protein, which keeps you feeling full, so you don’t miss the carbs. My favourite is Longley Farm – the full-fat one is so creamy and not at all watery.
High-protein omelette. My daughter’s idea. Wilt a few spinach leaves in a knob of butter, pour in two seasoned eggs, then spoon a couple of tablespoons of cottage cheese over half. Turn off the heat, fold it over and slide it onto a plate. It’s not beautiful, but it’s really tasty.
A quick snack. Mix in chopped spring onion, cucumber and coriander with a few chilli flakes, salt and pepper. Tomato and basil, red pepper or sweetcorn work too – the sky’s the limit.
Mango, chilli and lime. Top cottage cheese with little cubes of mango, fresh coriander and slices of a mild chilli, then squeeze over lime. Tip: cut the cheeks off the lime and you won’t get pips.
Stuffed pasta shells. Cook large pasta shells, refresh in cold water, and fill with cottage cheese mixed with chopped tomato, spring onion, torn basil, mashed roasted garlic, chilli flakes and sea salt. Drizzle with oil from a jar of sun-dried tomatoes and scatter with crispy bacon.
