Croustades are little edible bread cups for canapés. You can make them yourself, but frankly it’s a lot of hard work. I buy them from Waitrose (with the crackers), and they last for months, so they’re perfect for unexpected guests, Christmas and parties.
No more soggy bottoms: a follower taught me to paint the insides with melted butter and let it set. It seals them so you can fill them earlier.
What to fill them with: the ultimate shortcut is a spoonful of any supermarket sandwich filler plus a garnish. I love beetroot salad with chives, sour cream with fish roe and dill, coronation chicken, and egg mayo with bacon crumbs. Try cottage cheese with mango, lime and chilli, or look in your fridge and get creative with leftovers.
