At the beginning of the week, why not make my orzo and bulgur wheat pilaf? It’s great for packed lunches on the go – just pack it into a lunchbox and take it to work.
The base. Melt some butter and toast 150g of orzo for a little while. Add 300g of bulgur wheat, a teaspoon of cinnamon, a teaspoon of salt and 600ml of vegetable or chicken stock. Bring to the boil, put a lid on, drop to the lowest heat and simmer for 10 minutes. Then take it off the heat and let it steam, lid on, for 10 minutes more.
Day one: stir in chopped dill and coriander and a little squeeze of lemon.
Day two: add some chopped tomatoes or red pepper.
Day three: add spring onion and cucumber.
Day four: stir in a tablespoon of harissa paste to give it a kick.
It tastes different every day – you might need to add a little salt as you go. The full film of me making the pilaf is in the recipes.
