What’s the difference between white and red miso?
White miso is sweeter, lighter and less salty (it won’t always look white, so check the label). Red miso is heavier, saltier and packs much more of a punch, sometimes made with barley as well as rice and soybeans.
If I’m keeping one in stock, it’s white. It’s far more versatile.
